Oops!!! I forgot about Fitness this week. Better Luck next week. I was so busy and Bad this week. I didn't even weigh in. Believe me, on Monday my wiifitplus will be yelling at me! I need to get back into my rountine. I know.

Time Out for Thetamom Thursday

It’s Time Out for Theta Mom Thursday! The goal is to grab one hour of time within one week to do whatever you want…without the kids. It’s such an amazing proposition, I know so I thought I would join in. I really like the concept and everyone participating is so nice :)
This week I have been so busy... The only time out for myself has been going to Physical Therapy. I'm thinking this is good to count this as a mommy timeout because I am really be punished (by abusing myself). I know in the end... This will be good but right now this is torture. I am going to help my shoulder and all I keep getting is more pain. I know "No Pain No Gain". So, I will continue to go to PT but I need to find something elese to count as my Mommy Time. I'm hoping that next week, I can do something more fun and exciting to make up for this week. I am so busy with planning, cooking and cleaning to get ready for our Halloween Party and my son's birthday that next week, I deserve a whole day to do nothing. We'll see.

Creamy Chicken and Noodle Soup from Busy People's Fast and Frugal Cook Book

Creamy Chicken and Noodle Soup
Grandma would be so proud!

Ingredients
12 cups plus 1 cup chicken broth made from bouillon,
divided
6 stalks celery, finely chopped (to make 2 cups)
2 tablespoons
minced garlic (from a jar)
1 (12-ounce) package fettuccine
½ cup
cornstarch
1 (14.5-ounce) can sliced carrots
2 (12.5-ounce) cans chunk
chicken breast in water


Instructions for entrée:
• In a large
non-stick Dutch oven or soup pan bring to boil 12 cups of chicken broth made
from bouillon.*
• Finely chop 6 stalks of celery with the leaves to make 2
cups, add to broth.
• Add 2 tablespoon minced garlic (from a jar) to the
broth stir well.
• Add 1 (12-ounce) package fettuccine into the broth; break
the fettuccine in half before adding to broth.
• Bring soup to full boil
stirring occasionally.
• Cook at a full boil soup for 12 -14 minutes or
until fettuccine is tender.
• Dissolve ½ cup cornstarch into 1 cup chicken
broth and set aside. Pour into the soup.
• Add to soup 1 (14.5-ounce) can
sliced carrots and 2(12.5-ounce) cans chunk chicken breast in water. Breaking up
the big chunks of chicken before putting into soup.
• Stir until everything
is heated through.

Yield: 16 (1 cup) servings
Calories per serving:
153 (9% fat); Total fat: 1 g; Cholesterol: 19 mg; Carbohydrate: 22 g; Dietary
Fiber: 1 g; Protein: 12 g; Sodium: 541 mg
Diabetic Exchanges: 1 1/2 starch,
1 very lean meat

Helpful Hint:
• To make the broth: Add ¼ cup
chicken granules instant bouillon to 12 cups water stirring until dissolved, and
1 teaspoon chicken granules instant bouillon to the 1 cup water stirring until
dissolved.

Meal Suggestion:
30 minutes for total meal:
Homemade
Seasoned Crackers
Instructions to prepare suggested meal
Set timer for
30 minutes

30 minutes before meal
• Make the Creamy Chicken Noodle
Soup according to the directions. After you put the pasta into the boiling
broth, then make the Homemade Season Crackers.
10 minutes before meal

Begin making the Homemade Seasoned Crackers according to directions.(Recipe
below)
5 minutes before meal
• Place the seasoned crackers in the oven.
Bake until crispy, 3-4 minutes.
• Finish making the soup.

2 Baking sheets

Grocery List for entire meal
PRODUCE
Celery (6 stalks needed)

PACKAGED
1 (12-ounce) package fettuccine
1 (14.5-ounce) can
sliced carrots
2 (12.5-ounce) cans chunk chicken breast in water
4
fat-free flour tortillas

PANTRY
Chicken broth made from bouillon (13
cups total needed)
Minced garlic
Cornstarch
Garlic salt
Dried
parsley (5 teaspoons needed)
Paprika
Butter flavored cooking spray

Homemade Seasoned Crackers
These were a huge hit with the children!

Ingredients
4 fat-free
flour tortillas
1 ½ teaspoon garlic salt
5 teaspoons dried parsley
1
teaspoon paprika

Instructions
• Place oven rack in middle of oven.
Pre-heat oven to 450 degrees.
• Cut 4 fat-free flour tortillas into 8 pie
shaped wedges. Arrange wedges in single layer on 2 baking sheets.
• Spray
wedges with butter flavored cooking spray on both sides of wedges.

Sprinkle 1 ½ teaspoons garlic salt, 5 teaspoons dried parsley and 1 teaspoon
paprika evenly over wedges.
• Place in oven and bake for

seasoned tortillas in the oven. Bake until crispy, 3-4 minutes.

Yield:
16 (2 crackers) servings
Calories per serving: 31 (0% fat); Total fat: 0 g;

Necco Review


Just in Time with Halloween coming, and Candy on all of our minds, I had the opportunity to review Necco Wafers. I love candy so when I received a bag of these in the mail, I was excited. The kids couldn't wait to have some of these.
In the 11oz package you get 23 jr.size rolls. This was enough for the kids and I to try these and hopefully we have some left to share.(I'm offering to share or I would end up eating them all) I received the All Natural Original (7 great flavors) I really liked these. I wish that they had the flavors listed so you knew which colored ones were which flavor though. I didn't see that on the bag or on each individual one. I guess you just have to go with your taste and hope that you like each flavor. I like the cinnamon flavored and orange the best. Necco Wafers do come in a variety of different flavors.
The assorted flavors include Orange, Lemon, Chocolate, Clove, Cinnamon, Wintergreen and Licorice. My son liked these all except the licorice. They offer chocolate wafers with 4 great flavors (milk,dark,white and Mocha) My daughter is a chocolate lover, so she prefers this kind. They also offer SmartFuits with real fruit and antioxidants. Flavors include Raspberry+Acai, Lemon+Goji, Pomegranate+Goji, and Blueberry+Acai. They have a new one called Necco Smoothie wafers which combines the classic wafer with the taste of a smoothie drink. My son wants me to buy him the Smoothie ones to try. We all liked these Necco Wafers and they are a fat free candy treat. I know I will see more of these candies in our Halloween goody bags. People have enjoyed these since 1847.

Busy People's Fast & Frugal Cookbook



I recently had the chance to read "The Busy People's Fast and Frugal Cookbook" by Dawn Hall. I received this book from Thomas Nelson book review bloggers program. http://brb.thomasnelson.com/

The name of this book would catch anyone's eye. Cookbooks that say that they are fast and frugal and for busy people seem to be something that I feel many would be interested in getting. With the economy the way it is, many people are dining out less and eating more at home. Many people want fast and inexpensive meals to cook for their families. Dawn Hall shows home cooks how to prepare simple and fast food that's as healthy as it is easy on the budget.
I like that Hall gave her readers an introduction in which she shares her personal story and the inspiration for creating this cookbook. This cookbook is divided into nine different food categories, ranging from breakfast and brunch all the way to desserts and including beverages. Within each category ,the recipes are according to how long they take to make. Most of these recipes should take 10 to 30 minutes or less. For each recipe, she gives you a supply list which includes the grocery items, as well as the supplies you will need to make this meal. Hall includes helpful hints(ideas or easier ways of doing things) that might make things much easier. The nutrition facts are included(like how many calories,fat,protein,etc.) and show that the recipes are healthy. I really liked that feature. I was impressed with the frugalness of the recipes. Many times when you get cookbooks, the recipes are complicated and expensive, not with this book.
I think almost everyone would enjoy using this cookbook from time to time. I think this would be perfect for beginners and would make a nice gift.

I really like the concept and everyone participating is so nice :)
I spent an hour (well actually more) this week with the hubby. He took me to lunch for running errands with him. So, I had to ride around and spend some time with him just to get a good lunch. I guess he knows how to bribe me. (LOL) He had to stop here and there and while he was in one place for around 15-30 minutes I even got in a cat nap. It wasn't so bad. The only thing disappointing was I wasn't home to spend time cleaning. Oh darn!!
I also am taking time out each week to go to physical therapy to help my shoulder and back out. Today, while I had to sit with this cold pack pulsating my shoulder for around 15 minutes I actually relaxed and almost fell alseep. Too bad, it wasn't longer.
I'm hoping that I will have some more fun and interesting ways to spend my hour next week.

Monday Morning

Today's Monday and this morning is flying by. I have so much to do and I'm not sure where the time goes. I need to spend some extra attention to my house. I can hear it crying "What about Me!!" So, I guess I will be doing some extra house cleaning today. Then after the kids get home and I'm gone tonight I know by the time I get back it will look like I didn't do anything. This is the story of my life. LOL

Flew By Friday

Today Flew By. Faster than usual. Today I had a very busy day. My son had a Doctor's appointment that took forever. Then we went to lunch. And that was sooo Good!! We went to my son's favorite place-Spaghetti warehouse. I think that Connor ate 2 loaves of bread himself. Their bread is the best!!! Then he ate their Italian Wedding Soup which is Awesome too. Then he took about three bites of his spaghetti and meatballs-which meant leftovers. That doesn't bother me. This means less cooking. I had Chicken Parm and took over half of my lunch home. (but that didn't last too long w/ hubby home)And he even went to lunch with us.
Then after Kylee was home from school we went and signed her up for IceSkating. This is something she wants to try. The nice thing is they offer rental skates so I'm not buying her any right now. I want to see if this is something she's going to continue to like before I buy her a Good pair. So, the skating lessons don't start until Nov. 2nd so I am going to take her to the open public skating hopefully this Sunday. I don't think I will be trying this though. The last time I wore skates, the blades felt like they were going right through my foot. I'm not very good anyways and I don't really feel like hurting my back anymore than it is. Good Excuse... Hopefully Kylee will like iceskating but if she doesn't... At least she got a good experience. I will never force my child to play a sport, they can chose what they would like to try. But I will force them to continue playing through their season/session or commitment. If they don't like it-they don't have to do it again but they are not quitting in the middle of the season. I'm trying to teach them good habits and make them responsible.

I spent an hour today at the Physical Therapist's office. My back and shoulder have been killing me for some time now and I finally made an appointment. Now, I will be going twice a week and taking care of myself. I'm soory to disappoint you-this really wasn't very interesting but On Monday morning (while the kids didn't have to get up for school) I slept in. That Extra Hour of Sleep was Awesome!!!! Next week I will try to do something more fun and interesting.

No School Today-Columbus Day

Today's Monday and the kids are home celebrating Columbus Day. They had a long weekend and we didn't really get to do anything too excited. So, I guess since they are home from school today we are going to do something fun now. Well my sister just called and we decided to take the kids bowling. So, I will be off spending some time having fun with the kids for the day.
I was just wondering?? How many of you celebrate Columbus Day? My other sister lives in Wisconsin and the kids still have school there. Here in NY the schools are closed along with the banks and post office. But...Luckily for us there are many activities going on and the malls are always open. So- Fun Day Here We Come.

Tips for Getting Dinner Ready in a Flash

With Our busy schedules getting dinner ready in flash can be very challenging for many of us. My Tips include:
1)Planning -This is very important!!! You can plan out your meals ahead of time and this will make preperation so much easier. If you know what you want to have this week you can purchase what you need /or what's on sale from your local grocery store and this will make it so much easier if you have all the items available. It's so hard to make dinner when you're missing the ingredients.
2)Crock-Pot Meals-I love my crock pot. This is a time saver!!! You can put a frozen roast in with potatoes and have it ready without much fuss.
3)Frozen Meals-You can make your own meals ahead of time and freeze or buy frozen dinners. There are many to choose from and much healthier options.
4)Quick Meals- There are many "Quick Meal" options. I buy frozen meatballs to have on hand for those times I need a dinner in a flash. It only takes about 10-15 minutes to make spaghetti and meatballs.(Granted homemade tastes better-but we are talking about time here)Cook pasta, heat jar of sauce and unthaw frozen meatballs in the microwave. That's pretty quick. There are many others like Breakfast For Dinner (Eggs,pancakes, french toast) Or Grilled cheese and tomatoe soup,etc.
5)Take-Out/Oder In-I love to order pizza or stop by and pick up subs.

**My Favorite Tip is to Dine Out!!! Either at your parents or your favorite restaurant.**
If all else fails: Hit the Drive Thru.

Fitness Friday


Here we go again. This week flew by and maybe you seen me flying too. And that wasn't me riding my broom. LOL It was me using the new Wii Fit Plus and its so much fun. I hope you didn't see me, I look funny and I feel like a dork but I can tell you that me arms felt like I was flying. I am talking about Bird's-Eye Bull's-Eye one on the Training Plus section. This is a good workout for the arms. I can feel them toning up already. I also like the new Perfect 10 one. For this one you have to use your brain doing math and moving your hips to add the numbers. I like that I have to think and move at the same time- this can be challenging and help with the multi-tasking. I think this will be good for the kids too. And hopefully help with their math skills. Another fun one my kids have been doing alot is the Obstacle Course. Kylee just loves this one and She is getting a good workout. She is having so much fun doing this that she didn't even realize how long she was playing. She liked beating her own score and so I tried doing this one this morning and I liked it. But I hate to say this...She kicked my butt..But she did this way more. So, I guess I need to practice and beat her. I guess maybe tonight we can have a family game night with some good competition. I will need to practice alittle more before the kids get home from school. So, I guess you know where I'll be. ( Not sitting on the couch -eatting bon-bons and watching my soap opera) LOL -

Monday Morning

Monday Morning....
I used the new Wii Fit Plus this morning. It was alot of fun. I'm glad nobody was here to see me. I was laughing at myself and must have looked like a dork. I did one of my normal workouts this morning. This included: the 10 min. Hula Hoop, Step Aerobics (2x) And the short Run. This was a total of 24 minutes and I burned 99 calories. Yeah 99 calories. Is this Right??? I thought that when I was Hula Hooping I was burning alot of calories. I must be doing it better than the recommendations and burning more calories than that. I sure hope I was burning more than 47 calories for 10 minutes. Okay anyways, then I continued on with the new stuff. I need to spend more time and figure out exactly how to do some of these new ones. I can't bicycle-well you just walk in place & I can do that-but I can't steer very good. I was going in circles trying to get all the flags. I like the kung-fu one but I need to do this a few more times to get the right rythum and stuff. I think this ones going to be a good workout. It reminds me of the boxing but you need to have the right moves and timing like in the step aerobics. Well I spent about 1 1/2 hours playing/exercising this morning. I think this might have been the motivation I needed. I will fill you in more, as I'm just starting and have some more experimenting to do.

I Got the Wiifit Plus Today

Hubby went to store today and bought us the Wii Fit Plus . The kids and I were excited when he brought us home the new game. I put in the game and all the information stored from the original wiifit was on this game. I'm glad I didn't have to open up everything again or switch disks. I'm excited and curious how all the new features are going to work. I tried a few out and after each exercise it tells you how many calories you burned. I really like that feature. I need way more time and use to give a full review. The only thing that I was disappointed about was the custom workouts. I was looking forward to setting up a custom workout thinking I wouldn't have to click on each exercise. You can do custom workouts but only from the strength and yoga sections. I love to use the aerobics section and will have to keep doing my routine as I do. I need way more time to play around and learn more of the ins and outs. Right now, the kids are taking turns playing. I will play tomorrow when they're at school and I have more time. I guess I will be getting some good workouts in and this is going to give me some more motivation.

Fitness Friday


It's Fitness Friday... I'm getting back into the routine and used the wiifit more this week. The weight...It's the same. That hasn't changed in awhile. I am happy to tell you that I bought myself some new clothes. "Size 4 Levi's" and "Small" Tops. That made me feel pretty good. I still need to lose those 5 pounds and then I'm going to aim for more. And Not gain any with the Holiday's coming up (This will be a test, I love baking and eating all the Christmas cookies and pies)
I'm Excited...The Wii Fit Plus will be available October 4!!!! Yeah I want it!! It looks like they stepped up and added things we really wanted. You can keep track of calories burned!!! I like that (great feature from the EA Sports Active Game) There are many new exercises. You will be able to create custom workouts...which will be awesome to not have to bounce around anymore! ...Yeah! I am going to treat myself and get this. I think I will really like it and I think its only like $20.00. I'm hoping this will give me some new motivation. I'll let you know after I try it out.
